Anita's recommendation: Gelatine pudding with mixed forest fruits
31-05-2026
A dessert for 8–10 people.
This dessert contains fewer calories than a glass of semi-skimmed milk.
Ingredients:
6 gelatine leaves (9 g)
1 teaspoon vanilla extract (5 g)
250 ml water
250 ml lemonade syrup
200 grams mixed forest fruits
200 grams raspberries
150 grams blueberries
Tubular cake tin or heart-shaped cake tin
Preparation (10 mins preparation time, 2 to 4 hours in the fridge):
Place a small saucepan with 250 ml water on the hob.
Fill the cake tin with, in succession, 100g mixed berries, 100g raspberries, 150g blueberries, 100g raspberries and 100g mixed berries. These can be fresh fruits, but frozen fruits work just as well (no need to defrost). Set aside some fruits for the garnish.
When the water starts to bubble, remove the pan from the heat. Dissolve the gelatine leaves one by one. Then add the syrup. Pour the mixture into the mould and leave to cool to room temperature for 15 minutes. Then place in the fridge to set completely. Depending on the mould, this takes 2 to 4 hours.
To serve: fill the sink with a layer of hot water that is as deep as the pudding in the mould. Carefully place the mould in the water for 30 seconds. Place a plate on top of the mould and turn it upside down.
