The secret to this dish is the sweet and sour sauce, which you can easily make yourself.

 

Ingredients:

Sweet and sour sauce

1 onion

1 clove garlic

1 packet tomato frito (400ml)

2 tbsp sugar

4 tbsp soy sauce

4 tsp ginger powder

4 tbsp white vinegar

Pepper and salt

Olive oil

 

Omelette

8 eggs

250gr sliced mushrooms

1/2 leek in half rings or 1 onion + 2 carrots

2 hands peas

salt, white pepper and olive oil

 

Rice

300 gr white rice

 

Prepare (20min prepare, 30min bake):

Cook the rice according to the instructions on the package.

 

Sweet and Sour Sauce

- For the sauce, finely chop the garlic and chop the onion. Sauté this for 3 min in some olive oil in a saucepan, high flame.

- Add the tomato frito and fry it with the onion. Heating will de-acidify the mixture and give it a sweeter flavour, 5 min, high flame.

- Add the ginger powder, soy sauce, sugar and vinegar. Bring to the boil while stirring.

- Simmer on a low flame for 5 min. Season the sweet and sour sauce with salt and pepper. If the sauce is still too thick, add some extra water.

 

Omelette

- Beat the eggs in a large bowl. Add the chopped vegetables, mushrooms and a pinch of salt and pepper. Mix everything well.

- Heat the rest of the oil in a large wok and add the egg mixture.

- Fry the omelette on low heat until done in 2 x 15 min (flipping halfway through). After turning, go through the egg with a spatula to create coarse pieces.

- Serve the omelette on a bed of white rice and pour the hot sauce over it.
