Anita's advice: Quiche with Broccoli, Tomato and Blue Cheese - a main/side dish

For 4 persons
Ingredients:
1 roll of puff pastry (230 grams, around 30 cm)
1 broccoli (500gr)
3 tomatoes (250gr)
1 onion (250gr)
250 gr mushrooms
125 gr blue cheese
50 gr grated Emmenthaler cheese
6 eggs
1 tsp basil
1 tsp rosemary
Preparation (30 min preparation, 45 min oven time):
14:00 Preheat the oven to 200 degrees. Grease the spring form (26 cm) and line it with puff pastry.
Wash the broccoli and cut it into small florets (max 2cm). Cut the tomato and mushrooms. Chop the onion.
14:15 Beat the eggs with the spices and a dash of milk. Cut blue cheese into pieces and mix in.
14:20 Wok the broccoli, onion and mushrooms for 5 minutes. Stir-fried mixes the vegetables better with the egg-cheese mixture.
14:25 Mix the stir-fried vegetables with the tomato cut into small cubes and the egg-cheese mixture in a bowl and pour into the spring form. Sprinkle with grated emmenthaler.
14:30 35-40 minutes in the oven at 200 degrees.
Information:
The blue cheese gives identity to the quiche, so do not replace it with Gouda cheese or the like.
