Anita's recommendation: Hindustani Potato Curry

We've been really into curry lately. This recipe uses potatoes. It’s relatively inexpensive and low in calories for such a mountain of food. The dish contains hardly any fat or carbohydrates, so it is exceptionally healthy and delicious.

 

Ingredients:

4 potatoes (1000g)

200g ground beef or vegetarian meatballs

500g carrots (fresh)

250g green beans (fresh or frozen)

250g peas (frozen)

500g cauliflower (or broccoli)

2 onions (400g)

4 tbsp sunflower oil

2 tsp Curry Madras or Garam Masala

2 tsp hot cayenne powder or spicy paprika powder

2 tsp parsley (dry)

2 tsp oregano

 

Preparation (prep 15 min + 20 min cooking time):

Peel the potatoes, cut them into cubes, and fry them for 20 minutes in oil with the parsley, oregano, and 1 tsp Curry Madras.

Cut the vegetarian meatballs into quarters, or roll small meatballs from the ground beef. Fry the meatballs in a separate skillet for 20 minutes.

Wash the carrots, cauliflower, and fresh green beans. Cut all vegetables into large pieces.

Place the chopped onion in a wok with the oil, 1 teaspoon of curry powder, and cayenne powder. Stir-fry for 3 minutes.

Add the cauliflower, peas, beans, and carrots. Stir-fry for 5 minutes.

Add the fried potatoes and ground beef. Heat through for 5 minutes.

Serve as a main course.
